Hey guys…
How’s your evening? Mine has gone surprisingly well after the day I had, but I’m done with that and have super exciting things to tlak about!! I can scratch off 3…count them 1, 2, 3 recipes off my list of 1000+ in the book Passionate Vegetarian. I have to admit that I was a little nervous after making the ‘announcement’ that I was going to cook my way through the entire book by my 32nd birthday, but now that I’ve gotten started I’m feeling a whole lot better about the entire challenge.
Before I startd making dinner I had a little snack…
these mini larabars are great when you want a little bite of something, but don’t want or don’t need a full size bar. I recommend them highly!!
So…it was time to get started. Jason was doing laundry and the girls had decided they wanted to watch Sleeping Beauty and I was left alone in the kitchen with a bunch of ingredients and a food processor.
For my first day I made choices that I thought would be a little easier and slo something that Jason and the girls would like. Gotta butter them up with stuff they like before springing the really new foods on them…right?
I decided on page 22 (mockamole) first. Basically you take these ingredients…
chop, drop and pulse in the food processor and you get this…
Then I went with page 21 (Austin Hill Country Hummus) and basically do the same thing with these ingredients…
and you get this…
not the most appealing looking thing I know, but the taste was outstanding!!!
Then I moved on to page 52 (Hill Country Quesadillas) which wasn’t hard at all…duh! I have made quesadillas a million times, but it was in the book and a good match with the other two choices so there you go.
Can I make a confession??
I had originally said that this book was intimidating to me for years, but now that I’ve made the choice to cook my way through it over the next 16 months I’ve realized that this book (for the most part) is NO big deal.
I have every confident that this book will not only be mjuch easier than I had anticipated, but be amazingly fun to cook through. I look forward to eating EVERYTHING that this book has to offer.
Jason was surprisingly satisfied with the things I made too. He wasn’t super stoked about the mockamole, but he said that the combination of everything together was pretty good and very filling. YAY!! The girls even ate it for the most part without complaining. I would say that is a definite score for the first night.
After dinner was eaten and the kitchen was clean it was time for another review of Larry & Luna’s Coconut Bliss. Tonight’s flavor pick was the Vanilla Island. Again, I shared the pint with Jason, Linsey and Regan and again we ALL have our own reviews.
1) My Review – The vanilla island was very refreshing. It wasn’t overly sweet like most vanilla ice creams and it wasn’t heavy in my stomach. It was light and a bit tropically (if that’s not a word I just made it one!) which I really enjoyed. I would love to drizzle a little of my grandmother’s homemade fudge sauce over a bowl of this and go to town some night…
2) Linsey’s Review - I don’t really know how to describe this one. It’s good, but not like a vanilla ice cream I’ve had before. I like it. I think it tastes good.
3) Jason’s Review – It has a clean taste. I didn’t taste much of the vanilla because the coconut seemed to overpower the vanilla. It had definite vanilla undertones once you got passed the coconut base.
Thanks again to Luna & Larry’s for donating five free pint coupons to RealFitMama so that I could taste and review their product. So far I am super impressed. I have two flavors left and I’m saving my most anticipated flavor for last…Chocolate Hazelnut Fudge.

I didn’t know that larabars came in mini’s, those look perfect for me as I NEVER finish a whole bar
I love the vanilla it’s one of my favorite flavors, I use a scoop in almost all the smoothies I make.
@Kiley…larabar minis are perfect for right before a workout or (like me) I get up at 5:30 and almost NEVER get to eat my actual breakfast until 8:30ish. A larabar after my shower helps jump start my metabolism without blowing through a ton of calories in the process.
Got another flavor to try tomorrow night…super excited!!
