Hey guys!
I am so excited to have an extra day off this week. Our weekend was so jam packed that no house work (besides laundry) really got done. Having this extra day will help me get caught up and give me some time with the girls not being so rushed. Jason is working today, but he should be off at a decent hour so that will still give us ‘family time’ tonight.
Since we were all off today I got to eat breakfast with Jason and the girls. It wasn’t anything fancy, but sitting at the table with all of us there is so fun in the mornings. The girls are there in their jammies and still have that sort of sleepy look in their eyes. I love it! How cute are they?!
Linsey and Regan both wanted waffles…so waffles they had! I was in the mood for oatmeal – SHOCKER – but didn’t cook my oats last night. I decided to try the 3 minute oatmeal cookie that I have seen a few zillion times pop up on CNC lately. I opted to make two…one for me and one for Jason. He’s always willing to be a guinea pig! I altered Tina’s recipe a tad. Here’s what I used…
- 1/4 c old fashioned oats
- 1/8 c liquid egg whites
- 2 tsp brown sugar
- 2 tsp whole wheat flour
- 1/4 tsp vanilla
- 1/4 tsp baking powder
- 1 tbsp dried cranberries
- 1 tbsp shredded coconut (for sweetness)
- dash of cinnamon
Just mix all these ingredients into a microwave safe bowl, flatten out with the back of a spoon and cook in the microwave for 1 – 2 minutes.
Once mine was finished “baking” I sliced half of a small banana on top (Linsey stole the other half) and added a huge spoonful of Peanut Butter & Co White Chocolate Wonderful…YOWZA!!!
Add my giant Chicago mug full of some Dunkin Donuts coffee and my breakfast was FAB-U-LOUS!!!
Jason’s gone on to work now. Linsey’s been calling everyone in my contact list (family of course!) to sell them girl scout cookies. She is quite the hustler!!!
Time to get house work done and keep these girls from killing each other! Sometimes too much togetherness is…well – too much for them!!
