Seriously An ENTIRE Day in the Kitchen.

Evening…

Tonight’s post is coming very late because I have been running since my alarm went off at 5:45 this morning. I jumped out of bed and hit the ground running (or shredding) however you want to look at it. I tackled the Jillian Michaels 30 day shred again at 6:00 and it felt great. I added hand weights for the first time and it made it that much harder, but it was a good hard.

Jason was gone off to school and it was me and the girls to fend for ourselves, but we managed just fine. At this point I kinda know what I’m doing when it comes to that. ;)

Breakfast was yummy. Oats with pumpkin, sunflower butter, chopped walnuts, a small banana and a drizzle of maple syrup.

After this yummy was in my tummy I got the girls to school and myself to work. I worked through the day running around all day and worked up an appetite just in time for lunch.

I made myself an Yves smoked ‘chik’ sandwich on an Arnold sandwich thin with olive oil mayo, dijon mustard, muenster cheese and HOT SAUCE – WHAT!?!? I paired with a pear. :)

I finished the day, picked Regan up and then headed to Linsey’s school to pick her and Nicole up for dance.

Regan and I hung out together while the girls were in ballet class. We colored, played with my keys and then before I knew it the girls were done with class. Thank goodness because Regan wouldn’t have made it any longer!

Once we got Nicole dropped off and got ourselves home I hit the kitchen and made dinner. Nothing fancy tonight because I’m still thumbing through Passionate Vegetarian to get this movement started. So tonight we had the Trader Joe’s Powerhouse Salad with Morningstar Farms veggie nuggets.

I really needed a salad that big because I was feeling a little draggy. I don’t think I’ve been getting quite enough vegetables lately, but that’s ALL going to change. I’m excited about my challenge, but really scared too. I went to bed with the Passionate Vegetarian in bed with me hoping that some sign would come to me in the night. Not so much, but I’ll get it. I just need a couple more days to collect my thoughts and it’ll be an uphill push from then on.

The girls and I made two dozen banana nut muffins (sadly it was from a box) for the Boy Scout Chili Cook Off that our Girl Scout troop was invited to tomorrow night. We’re having a bake sale to raise money for our troop. We did it last year and were pretty successful so the boy scouts invited us back.

Jason is actually the Celebrity Judge of all the chili’s and will totally be in his element. I’m sure we will have a great time. I know the girls had fun making the muffins…

Hee’s what we put into the oven…

And here’s what we pulled out…

The whole house smells like warm, yummy, nutty bananas and I love it!!

Good night everyone. I have a date with a little girl who wants to watch American Idol. I know I dropped a “bombshell” or something last night and then kind of left you hanging tonight, but I’m working it out. I’m planning on hitting the ground running this weekend so check back soon.

If you haven’t already, don’t forget to enter the giveaway for a free night at an amazing hotel in Chicago on Michigan Ave!!! The contest ends tomorrow night and the winner will be announced Saturday morning. Good luck to everyone who has entered thus far!!
