Evening folks. I feel so great about my earlier post and the response from readers has been amazing. Thanks to everyone who has left a comment, a twitter message or an email. It really means a lot to know that people are out there and touched or inspired by what I have to say. So many of you have inspired me!!
Lunch was very small today. My breakfast still had me feeling full well into the afternoon so when I finally was hungry I didn’t want to ruin my dinner by eating too much. I had more than a snack, but less than a lunch at about 3:30!
This is a little thing I like to call – a Yogurt Bowl!!
- one small container plain nonfat Greek yogurt
- 1/2 c cinnamon puffins
- 2 tbsp canned pumpkin
- 2 tbsp maple syrup
- Mix and Eat!!
Dinner tonight was quite a switch. I love breakfast for dinner, hell, I love breakfast anytime!
So tonight I took a menu item I saw this morning at First Watch and made it my own at home.
May I present…Sparks’ Island French Toast!!! Here’s how I did it…
- Trader Joe’s Cinnamon Raisin Bread
- 1 egg
- 1/2 c liquid egg whites
- splash of vanilla
- 1/4 c vanilla soymilk
- sprinkle of cinnamon
- 2 bananas
- shredded coconut
- chopped almonds
- maple syrup
Then take a large skillet and get it pretty hot then spray with nonstick cooking spray. Dredge the bread slices in the egg mixture getting both sides coated well. Then “fry” in the skillet till golden brown on both sides. Slice the bananas length wise and top one piece of the toast with a few slices of banana then top that with another slice of the toast. Sprinkle with 1 tbsp of shredded coconut and 1 tbsp of chopped almonds then drizzle maple syrup over the entire thing. ENJOY!!!
It was like we visited a tropical island right in the middle of winter!! YUM-O!
I’m still waiting for my Linsey to get home. I miss her so and want her to be back now!!
My sister said she won’t be bringing her home until 8pm…
What to do until then?? I guess I’ll have to make Regan hug me and kiss me and cuddle with me some more…

That french toast looks awesome!
I’ve worked really hard to become my authentic self and my blogging is just a part of that. I’ve learned to speak up for myself at work, with my family and with my friends. Sure, I still have work to do but I feel really proud of how far I have come.
What a question! I think doing what you love is so important and not feeling like an “imposter” when you are living your day to day life…..
