Hey Guys, I’m making this post quick because there’s a chick flick in my future! Jason bought me The Time Traveler’s Wife as a surprise and promised to watch it whenever I wanted and, well, I WANT!!!
If you follow me on twitter then you know I snack on some Trader Joe’s yogurt pretzels like a mad woman earlier. I actually only had 4 or 5, but I felt a binge coming on so I tweeted it out!!`Then I took my ass to the kitchen to make an actual dinner!
Speaking of dinner, it was sort of inspired by a new reader, Kalli, at FitandFortySomething. She made a really yummy looking taco salad the other day and it gave me (as Jason would say) a ‘hankerin’ for one tonight.
Like any good husband would, he headed straight to Trader Joe’s with my list in hand. Cause that’s how WE roll. I say I want taco salad and he goes to the store to get what I want!!!
Our taco salad’s were served ‘nacho style’ and tasted PHENOMINAL!!!
In the mix for a RealFitMama Taco Salad:
- bag of frozen fire roasted peppers & onions
- 1 bag of frozen corn
- 1/4 bag of frozen broccoli
- 1/2 lb sliced button mushrooms
- 1 can vegetarian black beans
- 1 packet taco seasoning
- long cooking brown rice
- 1 bag organic blue corn tortilla chips
About 1 hour before you want to eat start a pot of brown rice. Jason probably made about 2 cups. When the brown rice has about 15 minutes left to cook add about 1-2 tbsp of extra virgin olive oil to a large skillet and throw in all the other above ingredients. Saute until everything is tender and all the seasoning is mixed through. Then plate, eat and enjoy! I added a scoop of light sour cream, a scoop of guacamole, a scoop of salsa and a couple tbsp of shredded cheddar cheese.
My tummy is fat (as in full) and happy right now and I think there are a few more Trader Joe’s yogurt pretzels in my future to go along with the chick flick that’s also in my future…

What are your suggestions for something trying to become vegetarian and the transition period?
I would say that you have two options – “Go Big or Go Home” or “Flirt”!! GBorGH basically means that you just jump in the freezing cold water naked and never look back. Start by just not eating meat. You can add another vegetable to every meal or a handful or nuts in it’s place. There are a ton of meat substitutes out there and most taste pretty good, but you have to change your idea of the “normal” meal.
“Flirting” is entirely different. Try a meatless Monday or making one meal everyday vegetarian. Take your favorite pasta dish (the easiest meal to veggie) and trade out the hamburger meat for chopped up crimini mushrooms. I have a few vegetarian recipes under the Yummy Eats link and more are being added all the time. Either way you go don’t be afraid to experiment and try new foods or recipes. There is a world of great foods out there – go out and enjoy them!!
