Earth Day

Earth Day is like Christmas for me! I’m a tree hugging hippie at heart and every year I look for new ways to make a “difference” in the world…no matter how small they ALL count!

This morning I started by saving a little extra energy (my own) I slept in with Jason for an extra hour! :lol: I know that doesn’t really help Mother Earth all that much, but it did mean that our television was not turned on at all this morning because I skipped my shred work out. The lights stayed off for an extra hour and the coffee maker was off until 7:00 instead of 6:00. That ALL counts!

Once I did decide to arise I took a super short shower and let my hair dry instead of running the hair dryer. Then I did break down and turn on the coffee maker…HEY a girl needs coffee no matter what day it is! :lol:

Breakfast was the same for me, Linsey, Regan and Jason only with different add ins…

We ALL had instant oatmeal bake, but mine was made with chopped frozen cherries and then topped with Dark Chocolate Dreams…HOLY YUM!

I added an important item to my “to do list” with my morning coffee…

I think that will keep me plenty busy for a while! Now…how to do it? :)

Once I got Linsey dropped off at school and Regan was situated in her classroom I got busy working. Everyday that I leave work means I’m that much closer to being done working there altogether. That really makes me happy, but I worry about Regan and how she’ll do when I’m gone. I’m going back and forth with the thought of packing her a lunch to take to school every day like I do Linsey.

I have tweeted many times that if I could only fight for one cause for the rest of my life it would be this. There is nothing I find more repulsive and more infuriating than the lunches being served to children all over the country. The fact that the government allows pizza, garlic bread and milk to be considered a healthy, nutritious and well rounded meal suitable for children is appalling! Ketchup and french fries counting as a vegetable is the key to our nations obesity problem and if I had the money to fund a world wide nutrition program I would do it in a heartbeat. Sadly, I can barely afford my household nutrition program sometimes. :( I’ll figure something out…I know it. How does the quote go…? “Be the change you wish to see in the world.” :)

Lunch (for me) was super yummy. I am in love with (if you haven’t noticed) TJ’s everything bagels and today I toasted one and then added a Dr Praeger’s California veggie burger with muenster cheese, fresh spinach and hot sauce!

I had a sweet & juicy pear to go with it. Such a great lunch!

At the end of the work day Regan and I loaded up in the Jeep and headed over to Linsey’s school. She and Nicole had dance this afternoon and it was my turn to drive. We all piled in and had our snacks on the way. I’ve been trying a new think Thin bar every day and today’s was really good!

This one had a hint of strawberry in the back ground and the chocolate was smooth and sweet. The chewiness of the bar forced me to slow down a little while I was eating it so it took longer to finish. Once it was gone I was a little sad, but my tummy was definitely satisfied. I’m going to have to check these out at the store when my gift pack is gone!

We got Linsey and Nicole dropped off at dance then Regan and I made a quick run to the market. We needed some staples like WHOA! We were out of eggs, hummus, cheese, bananas and bread!! YOWZA…we made it back just in time for the girls to be finishing up in class.

Dinner was a little something different. I read on her blog and twitter page all the time about this sweet potato & vegetarian baked beans dish that Caitlin just loves! I’ve been having a love affair with sweet potatoes forever and decided it was high time I give this dish a try. Being that it’s Earth Day I didn’t want to open a can of baked beans tonight when I had a super yummy black bean/corn/onion/taco seasoned concoction in the fridge from last night. I opted to cook a whole sweet potato in the microwave and save half for lunch tomorrow (which will be topped with vegetarian baked beans) and I ate the other half tonight with the black bean mixture Jason made last night.

I also roasted some green beans with garlic, cavander’s and flaxseed meal!

Dessert was 2 (1 pictured) store bought shortbread cookies that were shaped like cute little flowers!!

The girls are in bed and I’m standing in the kitchen blogging while my oats for the morning cook on the stove…normal! :lol:

Linsey is so close to her fundraising goal for the ASPCA and the race is Saturday morning!! She is so excited that so many people are donating to her cause, but there is still time left.
