Pancake (gingersnap) Sunday

Morning! I had hoped to be able to sleep in this morning, but Regan had other ideas for how we spent our Sunday morning. She was up and yelling for me from her bed by 7:15! :evil:

Jason got right up, got dressed and headed to Bread Co for coffee since on our massive Target excursion yesterday we forgot that and toilet paper. :oops: He came back with this for me!

As you know Sunday’s are “Pancake Sunday” in the Sparks’ house. It’s been that way for as long as I can remember. I grew up eating pancakes every day in the summer as a kid. My grandmother was (and still is) famous for her chocolate chip pancakes. Obviously pancakes are a throw back to my childhood!

While I was lying in bed last night with Jason I switched the television (I know, I know…a television in the bedroom is not good) to Food Network because, as much as it pains me to admit this, I love Guy Fieri and more than him I love the show Diners, Drive Ins and Dives!! Well – last night they were at a place in Austin, TX called Magnolia Cafe. Normally I don’t get excited about much of the food on this show because it’s all meat, but I love the ideas I get from watching. Last night was no exception because they whipped up the best looking gingerbread pancakes and that’s all I could think about. I even dreamed about them!!! So guess what we had for breakfast??? :lol:

I was a little confused as to how to start this process, but I went with my old stand by pancake recipe (minus the banana in the mix) as the base. Then I pulled out an old favorite from Jason’s culinary school days!

I found just what I needed. :)

Then I got to work (with a little help from Jason) to get the mixture just right. Sadly I don’t know exactly how much of what we ended up using because it was a “add some of this…taste. Add more of that…taste” kind of thing. I can tell you that after the base pancake recipe we added ground ginger, nutmeg, cinnamon, black strap molasses and honey to get the taste we wanted.

The Magnolia Cafe adds sliced bananas to the pancakes as they’re cooking and I thought that sounded fantastic so that’s what I did too. :)

A long with the SUPER AWESOME gingersnap pancakes we had scrambled eggs and soy breakfast sausage. Here’s my plate.

The girls weren’t too thrilled with the pancakes (as I was afraid of) but they did eat a good portion of the one I gave them – probably to make me feel better. Jason and I, however, thought they were great!! I am going to play around with the recipe a little more to get it just right. :)

I’ve got a busy day today…laundry, take Linsey and a friend to a birthday party, got to a baby shower (if the rain stays away-which I doubt), more laundry, dishes and maybe watch another movie with Jason. I fell asleep during Zombieland last night, but Jason liked it!

In other news…REGAN POOPED IN THE POTTY FOR THE FIRST TIME!! :razz: So in honor of her she picked the video for this post…ENJOY!

  1. Not to rub it in your face or anything… but I’m moving to Austin, TX! I just spent the weekend there, actually, finding an apartment and someone told me about Magnolia but I never made it there. However in August it will be one of my first stops, I’ve heard amazing things about the pancakes!

      @Meredith NO FAIR!!! I actually have friends that live in Austin and have been DYING to visit them and try Magnolia Cafe so once you move you HAVE to try it and report back!!!
