Good morning dear readers!! How is your Sunday morning going?? Ours has been fantastic because it’s Pancake Sunday in the Sparks House! YUM!! After I posted last night about the super duper yummy pastry I got from Bread Co (I later realized I didn’t show you a picture of) I was in the mood for cherries and lots of them! So I decided in honor of Pancake Sunday I would treat my beautiful family to Bob’s red Mill whole wheat, high fiber,  dark chocolate, cherry pancakes! WHAT?! Yep – dark chocolate and cherry pancakes. Oh so good.

I had a giant mug of coffee while chopping cherries. You can see a glimpse of the cherry carnage behind my mug even.

What I did was took the Bob’s Red Mill pancake mix that I love and mixed it with cold water and applesauce (instead of oil) then chopped up some frozen cherries to add to the batter. Once I put the pancakes in the pan I added some dark chocolate chips and – VIOLA – dark chocolate cherry pancakes!!

Jason made scrambled eggs and we cooked maple soy breakfast sausages in the oven. Here’s my plate…

Plus another mug of hazelnut coffee.

With breakfast we were seranaded by Dave himself…my one true love (musically of course ) and I was brought back to a memory of the fondest kind (after my wedding and the birth of my daughters) that I simply MUST share with you!!

A few years ago (before I was even pregnant with Regan) I worked at a private health club as a receptionist in their spa. I loved my job, the people I worked with and the fact that I got a free membership to the gym. WOOT! Then one day the best perk of all took place.

Dave Matthews was in town for his concert and staying at the Ritz Carlton which was right behind our club. Rumor had it that he would be coming in to work out at some point that day and I was stoked! The day went by and he didn’t show and I was afraid he either wasn’t actually coming or I was going to get off work and miss him.

While unloading boxes of lotions, nail polish and other spa products I saw him out of the corner of my eye!!  I looked at my coworker and good friend Michele with fear, happiness, excitement and lust in my eyes. We talked back and forth about how I was going to meet him and get a picture taken with him to prove it!

Finally, as he was leaving the building, I got up the courage to approach him and ask if he would mind taking a photo with me so that I could show it to my husband (also a HUGE fan) and he not only smiled, hugged me and agreed – HE GROPED MY THIGH!! AHHHHH…. Dave Matthews touched my thigh and told me the exact words I will NEVER forget, “Tell your husband this is MY spot!” Then he laughed and we took the picture with my extremely shitty cell phone, but DAMN IT – I HAD THE PICTURE!

I may be in my silly spa uniform and it may be a tad grainy, but I have a picture with Dave Matthews and that is something special. Jason and I even got tickets to the concert and had an AMAZING time at the show. God Bless DMB…FOREVER!!! Muuuuuaaaaahhhhh! A big kiss goes out to Dave for the memories and the beautiful music. Thank You!!!
