Well – I was abandoned this evening. I cannot believe it! Tonight was the final performance episode of American Idol and Linsey & I ALWAYS watch American Idol together. Jason has a meeting on Tuesday nights that he goes to and Linsey likes going sometimes because their are other kids there to play with. She used to opt out of going so we could watch American Idol together, but tonight…NOPE! She ditched me for the other kids. And even worse – REGAN DID TOO! Little brats!!!
Oh well…Onto dinner then. It was fabulous except for the fact that making my favorite broccoli dish turned our house into a a sweltering portal to HELL! So we broke down and turned on the AC.
Jason tried to comfort me in our weakness by saying it would help with Regan’s allergies and the dogs wouldn’t shed as much, but deep down we both know the truth…WE’RE OLD AND WEAK! 30 and 31 respectively.
Broccoli dish – yep – back to my civil train of thought! I love this dish and it is so easy. Just start with broccoli florets..
Toss them with a bit of EVOO, kosher salt, pepper and garlic powder.
Lay them out on a lined sheet tray for easy clean up.
Roast them in an oven that’s been preheated to 375 degrees for about 20 minutes or until the edges get slightly brown. Then dump them back in the mixing bowl and sprinkle with a little parmesan cheese.
DONZO!! Just serve them next to anything else that sounds good and dinner is served. We had Dr Praeger’s California burgers and the rest of the tater tots the girls begged for last night.
This wasn’t just your ordinary veggie burger though. This burger was touched by the hand of a genius…also known as Jason.
We brought some of his super yummy coleslaw from the west coast reuben’s home and he added it to the burgers with muenster cheese and spicy brown mustard on a toasted whole wheat sandwich thin. HOLY GOODNESS!!!
So – now that I’m sitting here all alone, abandoned by my children for a play date with some other bratty kids (:lol:) I watched American Idol all alone.
I have to admit that I’m slightly nervous for Lee now. He has been my favorite from day 1, but tonight I think his nerves got the best of him.
LEE – MY FINGERS ARE CROSSED FOR YOU!!! Muuuaaahhh…
