After our long walk this afternoon Regan was asleep in no time so I was able to get quite a bit done. I finished the laundry (with 1 load still to put away), did the dishes AND played some Wii with Linsey.

Pretty soon we realized we were HUNGRY! So we had a light lunch. :)

The same day I received my flavor pack of Herbal Water I also received a sample of Nuttzo!!

I’ve been dying to try this amazing nut butter forever, but it isn’t sold anywhere near me. When I found out that OpenSky carried it I immediately added it to my OpenSky Shop. This is probably the best tasting nut butter I have ever had. It tasted exactly like what it is! I don’t have a funny after taste like you can get with other types of nut butters. Nuttzo also has an awesome, crunchy, but not too crunchy texture that goes perfect with a pb & j. I highly recommend it!

With my “lunch” I settled down for a little light reading as well.

If you haven’t noticed I’m kind of a Bethenny Frankel fan… ;) If you follow me on twitter you may have seen/read many tweets to @Bethenny or some tweets with the hash tag #thingsjasonsayswatchingbethennygettingmarried. Jason’s commentary is pretty freaking hilarious!! :lol:

When Regan woke up she was ready for dinner, but Jason wasn’t home yet so I had to stall her. Linsey turned on High School Musical 3 to help the time pass. Both of my girls are suckers for musicals (especially if they include cute Disney boys) so her mind was instantly preoccupied!

Finally dinner was served…

I made a pretty great tasting (if I do say so myself) honey dijon vinaigrette!

Honey Dijon Vinaigrette

  • 1/4 c EVOO
  • 1/4 c balsamic vinegar
  • 2 tbsp dijon mustard
  • 1 tbsp organic local honey
  • S & P to taste

In a small bowl mix all ingredients except EVOO. Once ingredients are mixed, slowly whisk in EVOO until well combined. Add salt and pepper to taste.

Jason surprised us with 1/2 of a homemade apple pie and we each had 1 piece. I was going to resist, but when I saw what my calorie intake was for the day I knew I had plenty of wiggle room. Plus – I’m doing my shred DVD tonight!
