Happy 4th of July!

I disappeared on you guys last night and for that I apologize, but I was super busy getting wicked in the kitchen and watching Eloise at the Plaza with Linsey & Regan.

HOT SATURDAY! :lol:

Dinner consisted of steamed broccoli, flax-encrusted potato balls and my very own black and bleu burger. I know, I know!

The burger was just a 1/4lb Morningstar Farm black bean burger that I cooked in the oven (the best way) and then topped with some crumbled bleu cheese. I served it on a bed of fresh baby spinach to sneak in more leafy greens. YUM!

Linsey and I made the potato balls together while Regan was napping. Here’s what we used:

  • 2 large baked potatoes
  • 2 tbsp sundried tomatoes packed in olive oil
  • handful of shredded mozzarella
  • organic ground flaxseed

We started by mashing the potatoes in a large bowl (using our hands) and I chopped the sundried tomatoes into bite sized pieces. Then we mixed the tomatoes and cheese with the mashed potato. Form it into balls and roll in a shallow bowl filled with ground flaxseed and place on cookie sheet. Spray the balls with a little pan spray to help get a little more crunch. Bake in a 350 degree oven for about 30-40 minutes. DONE!

Yes – we ate on the living room floor and watched Eloise cause we are just that cool. Aren’t you jealous?? ;)

I set out with the best of intentions of making Mama Pea’s Red White and Blueberry Pancakes for breakfast, but staying up way too late last night meant sleeping in too late this morning. :( Another day Mama Pea. Another day.

Instead we went with a quick and easy fix…

YEP! More overnight oats with cherries and chocolate peanut butter. I even got Jason and the girls in on it too. I think they really liked it!

Now it’s time to get ready for our holiday festivities! An afternoon at the pool followed by BBQ with friends and ending with a fireworks display.

    We call eating on the floor…”floor picnics” – my son loves it when he gets to do it! My in-laws were in town this weekend and we traveled for a baseball tournament, so when last night rolled around we had about enough energy to grill some burgers and then do some small fireworks in the street. Lucky for us though there were several other “larger” displays going on around us – so we pretty much got to sit in the driveway and watch several shows! Happy 4th!
