So – when I left you yesterday I was finishing my green monster. Shorty after I went for a run. It was cloudy and looked like rain was moving in so I figured it was then or not at all. It never even rained, but the cloud cover made for a really great run anyway!
When I got home I was all kinds of thirsty so I busted open a package I had received free in the mail on Friday…
I’ve been offering this water in my OpenSky Shop for quite some time now, but only because I thought they sounded really good and the flavor combinations intrigued me.
Well, the company was nice enough to send me a flavor pack so that I can try out all the flavors myself and give you my honest and real feedback. I wasted no time getting down to business.
The ginger lemon peel Herbal Water was a really great flavored water. It reminds me of being at a restaurant, ordering ice water and getting a pitcher of water with lemon slices floating on top!
This flavor was very lemony and very refreshing especially after that run. It went down smooth and the ginger wasn’t over powering at all. This is a flavor I highly recommend!
As well as the yummy, lemony water I also highly recommended a shower (which is exactly what I did) but when I got out Jason and Linsey were gone. They said they were “running an errand” so I went ahead and started making dinner.

The errand that Jason and Linsey were “running” was renting movies. So we all cuddled on the couch and watched Alice in Wonderland!
Can I just say that Tim Burton is a GENIUS!!! Everything he touches is brilliant, amazing, colorful and (dare I say) EPIC! Johnny Depp is obviously the most beautiful, talented and amazing creature to grace this planet. Need I remind you of my list?? If you haven’t seen this movie yet – GO NOW!!
We put the girls to bed and then watched a grown up movie (not that Alice isn’t) called Shutter Island.
I had been dying to see this movie (I love Leo) and it did not disappoint. I have to ask any and all of you who have seen this movie though – Was the lady in the cave real??? This is an absolute mind trip kind of movie. I needed a good night’s sleep when it was over. My brain kind of hurt a little.
Now for a little Pancake Sunday recipe that I know you’ll enjoy! It’s vegan, it’s sweet, it’s Y-U-M-M-Y!
Vegan Banana Nut Pancakes
- 2 c Bob’s pancake mix
- 1 1/4 vanilla almond milk
- 2 bananas
- 1 tbsp Bob’s ground flaxseed meal
- 3 tbsp water
- 2 handfuls chopped walnuts
In a small bowl combine water and flaxseed meal letting stand while finishing the recipe.
In a blender puree bananas and almond milk then add to large bowl with pancake mix and stir with a fork.
Add walnuts and flaxseed/water mixture to large bowl. Then cook like any regular pancake. YUMMMMM!!!
Since we aren’t actually vegan we did serve our vegan pancakes with scrambled eggs…
and veggie bacon, but our scrambled eggs came from a local farmer that we know and have visited the farm many times. Look at the color these eggs have! It’s all about choices, balance and knowledge.
Mama needed coffee, but settled for a cup of organic orange juice instead.
Maybe a walk to Starbucks later this afternoon for an iced coffee??
