A typical Monday?

Today has been an untypical Monday. Unless you count the fact that I over slept. I ran late all morning. I yelled the same morning phrases at Regan every other second; “brush your teeth,” “put your binky in the drawer,” “yes you have to get out of your jammies,” “you may not have cookies for breakfast,”…maybe it was a typical Monday after all. ;)

First disaster of the morning (besides over sleeping) was realizing I forgot to put the last load of laundry into the dryer last night. That meant Regan’s school blanket was still wet and the dress she specifically told me she wanted to wear was too.

How do I make a two year old drama queen happy during a melt down of mass proportions??

Breakfast in Mommy & Daddy’s bed of course! When I mentioned it the tears dried up, the sniffles stopped and the frown turned upside down. Then I asked her what she wanted… “Toast & yogurt!” You got it kid… ;)

I went with something a little more child like…PB&J overnight oats!

In today’s mix:

3/4 c old fashioned oats, 3/4 c vanilla almond milk, 1 tbsp organic ground flaxseed meal, dash of cinnamon. Then topped with 1 tbsp peanut butter, 1 tbsp strawberry-rhubarb jam and 1 tbsp slivered almonds.

The school blanket was dry in time. Regan opted to save her favorite dress for tomorrow and all was right in the Sparks’ house. ;) Off to school we went.

The deli was slow today. No biggie – Monday’s are usually like that. I did get two surprises through out the day though.

First: Dessert from a customer. Turtle brownies!!!

I indulged in one piece and put the rest away for someone else to enjoy. YAY ME!!

Second: A picture of Linsey hanging out with her friends downtown! Since when do 9 year olds do this??

Since she was lucky enough to get invited to spend the night at her friends house and then be taken to the City Garden for the day. Lucky girl…

As the day wound down I made myself some lunch.

A huge garden salad with cucumbers, tomatoes, red onions, pepperoncinis, croutons and honey mustard dressing. On the side was a slice of toasted pumpernickel rye with a piece of pepper jack cheese melted on top. :)

I also managed to pound out a 3 mile power walk in 36 minutes flat. At 3:00 in the afternoon. In 97 degree heat. That’s right…I AM A MACHINE!

Now…what do machine’s eat for dinner?

Things you may have missed this weekend:

  1. I received a very emotional plea from a reader.
  2. We spent Saturday and Sunday at the pool.
  3. One of my FAVORITE bloggers (Mish) did a guest post for I’m A Vegetarian!
