Good afternoon! Things are finally starting to settle down on the home front with the move being finished. I still have a few odds and ends to do and some leftovers in my car, but I will get to those when I can. I’m in no rush. The one thing I am dying to have fixed is my dishwasher. I’ve gone this long without one I can wait a little longer, but I will be overjoyed when it’s fixed!
I’m also overjoyed that Fall is finally here. Even though it’s right about 84 degrees right now all the signs are pointing to my favorite season. I think there will be apple picking in my very near future! And a trip to the pumpkin patch (or at least Target for some canned pumpkin) cause my overnight oats are screaming for some Fall add ins.
Until then I am still enjoying my overnight oats this way.
Keeping it simple these days with vanilla almond milk…

a sliced banana. Served with a glass of ice water – straight up!
After getting the girls to school I had to run by city hall to get our new occupancy permit and snapped a couple pictures of the outside. It really is a beautiful building, but my blackberry camera just couldn’t do it justice.
Inside it was all business, “No photos please,” but at least I got the occupancy permit. Then I was off to work.
Lunch was nothing special or original, but having a giant salad everyday in the afternoon helps me balance out that chocolate cookie I sneak in about 11:30 and always for get to photograph.
They are soooooo good though. Chewy and chocolate-y…can’t beat a good cookie.
A mixed greens salad topped with red onions, tomatoes, cucumbers, banana peppers, half of a hard boiled egg and some homemade croutons is my favorite. I drizzle it with a little honey mustard dressing and am good to go.
A piece of toasted pumpernickel rye with pepper jack cheese is the icing on the super healthy cake!!
Running was a no go for me today, but our toilet sure was busy. When we walked in the door I could hear it all the way from the back of the house. Who knows how long it had been running, but luckily some of the maintenance guys were here working on the upstairs apartment so they came in and had it fixed in about an hour. Some part had to be replaced. That’s what I love about renting…if something breaks – someone else has to fix it!
And so I walk…Linsey and I decided that we’re going to take the long way to pick Regan up from school and then walk to the bank instead of driving. That should give us a good 5 miles by the time we’re done.
Dinner tonight is looking really good – at least sounding good. I’m making a taco casserole thing…once I make it and name it I’ll tell you all about it!
