We have been up to our ears in fundraisers lately. First we attended a trivia night in the support of Linsey’s school’s PTO. Then we paid $50 to go to a chicken ‘n beer dance to help raise money for a friend’s mother. Last night was week three of fundraiser attendances for the Sparks Family.
Jason was asked to donate his time (and cooking skills) to a Progressive Dinner that was raising money for the University City Education Foundation. He made me be his sous chef!
I wasn’t really sure if we were actually eating at this dinner or just cooking so I munched a protein bar before we left.
I really wanted to take a picture of the house we were working out of (it was pretty much the house of my dreams!) because it was just that beautiful, but I errored on the side of discretion and resisted.
As soon as we walked in Jason got right to work in the kitchen.
The menu for the dinner was Pan-Latin (his specialty). For the first course he made “cocktel de camarones” which means shrimp cocktail in English.
The second course was “gazpacho” which is a cold tomato based soup (and super tasty)!
Luckily there was enough for me to have a small serving of my own!
While the attendees (a super nice couple whose names I can’t remember, the gym teacher from Linsey’s school, the couple hosting the dinner, Mary and her husband (whose name I also can’t remember) and a woman name Myra who is the edito of University City’s The Patch and a possible future business connection) were finishing the soup Jason got to work on the main course.
He and Mary had decided on a meal of grilled asparagus, quinoa with vegetables and baked salmon…all with a Latin flare.
Then we began the plate up.
The finished product before dinner was served. Even though I don’t eat fish the plates sure looked pretty.
Once the guests were served the hosts for the night invited us to sit with them during the main meal. We weren’t really dressed for the occasion, but we accepted the invitation anyway. I was starving!
Jason made a plate for me (minus the fish) and we joined them in the dining room.
There was great conversation, obviously great food and then we had to call it a night. The girls were at home with our friend Brian and we had left him to suffer through an evening with our darling little angels long enough!
Once we cleaned up and went home Jason and Brian went out for a Bro-Date and I put the girls to bed. Once the house was quiet and snoring from down the hall commenced I sat down to watch my netflix movie (Waitress) and enjoy a red velvet cupcake smuggled from the deli.
The cupcake was yummy and the movie was great. I passed out right after!
This morning we woke knowing we were out of coffee and had to make a trip to Target for odds and ends so we brought bake the Bread Co breakfast!
Coffee = $2.00
Jalapeno cheddar bagel with egg, cheese and chive n onion cream cheese = $3.00…
Everyone happily stuffing their faces = PRICELESS!

After Target we drove over to Forest Park to enjoy the afternoon at the Earth Day Festival.
Have to go make dinner for the fam!



































cocktel de camarones = my fave pan-Latin dish! (Mexico City style is the best!). I love that your family gets so involved, and I hope others take the initiative and use your example. Imagine what could be done if every house hold in American attended and financially supported only one fundraiser a month for a year!
Courtney – I couldn’t agree more! I really wish people were more interested in supporting and raising money for the public schools as opposed to letting them suffer while their money goes to the private schools. It really is a shame.

Cindy – We ended up having a really lovely time at Mary’s house, but due to baby sitting issues we couldn’t make it to the dessert reception at your house.
